The Old Cuban & Regal Ricky: Cupboard Cocktails

Allow me to introduce the Old Cuban: The Mojito’s understated and more refined older sibling. It uses gold rum, but I’ve substituted this for spiced rum since this is what’s in my cupboard. The alcohol-free Regal Ricky is fantastic on a hot summers day.

Ingredients
50ml Golden Rum (spiced will do as an alternative)
25ml Lime Juice
25ml Sugar Syrup
A couple of sprigs of fresh mint
2 dashes Angostura Bitters
Prosecco

Method

  • Put the mint, sugar syrup and lime juice in a shaker and muddle with the back of a wooden spoon (or muddler if you have one)
  • Add rum, bitters and ice to the shaker
  • Give it a good shake (with the shaker lid on!)
  • Strain into a coupette and top up with Prosecco
  • Garnish with a mint leaf

Regal Rickey


Ingredients
50ml Gin-Ish (or your favourite AF Alt-Gin)
25ml Lime Juice
25ml Sugar Syrup
A couple of sprigs of fresh mint
2 dashes Angostura Bitters (optional)
Noughty

Method

  • Put the mint, sugar syrup and lime juice in a shaker and muddle with the back of a wooden spoon (or muddler if you have one)
  • Add Gin-Ish, bitters and ice to the shaker
  • Give it a good shake with the shaker lid on!
  • Strain into a coupette and top up with Noughty
  • Garnish with a mint leaf
